I developed this recipe because I needed to find the perfect post-workout, mid-afternoon snack that would keep me full until dinner, not induce guilt or lethargy, and most importantly, taste delicious. And boy oh boy, do I look forward to eating them!! These crunchy, chocolatey, protein-packed granola bars are loaded with nuts, seeds, and healthy fats—plus a hit of sweetness from maple syrup and Tony’s Chocolate (the only truly fair-trade chocolate!).

Ingredients

  • 2 cups sliced almonds

  • 1 ½ cups chopped cashews

  • ½ cup chia seeds

  • 1 ½ cups coconut chips

  • 1 cup almond flour

  • 1 tsp vanilla extract

  • ¼ cup brown sugar

  • ½–¾ cup maple syrup

  • 1 ½–2 bars Tony’s Chocolate, chopped or shaved

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, mix almonds, cashews, chia seeds, coconut, almond flour, vanilla, brown sugar, and maple syrup.
  3. Spread mixture on a parchment-lined baking sheet (¼–½ inch thick).
  4. Bake for 10 minutes, stir, then bake another 8 minutes.
  5. While baking, chop/shave the chocolate.
  6. Remove granola, sprinkle chocolate evenly on top, and return to oven for ~8–10 minutes until glossy and melted.
  7. Cool completely, then freeze for 3–4 hours to set.
  8. Break into bars (save loose bits for granola!).Crunchy, nutty, chocolatey perfection.
